Carne Asada Marinade

Ingredients for 1.5 – 2 pounds of flank or skirt steak


  • 1/3 cup extra virgin olive oil

  • 1/4 cup coconut aminos

  • 2 limes, juiced (about 2 tablespoons)

  • 2 tablespoons apple cider vinegar (ACV)

  • 1 teaspoon black pepper

  • 1 teaspoon ground cumin

  • 4 garlic cloves, minced (4 teaspoons)

  • 1 jalapeño, seeded and minced

  • 1/2 bunch fresh cilantro, leaves and stems, finely chopped



Instructions:

  1. Marinate overnight for beef and up to 2 days for the moose.

  2. Remove from marinade and grill. Sear both sides for a couple of minutes so you are left with a medium rare steak.

  3. Thinly slice against the grain and serve.


I like to make street style tacos with mine using small flour tortillas, a lime wedge, thinly sliced onion, and cilantro, but you have lots of options so pick what suits you!
