Mexican Green Goddess Salad


Dressing Ingredients:


o 1/2 ripe avocado

o 1 cup cilantro

o juice from 1 lime

o 1 tablespoon olive oil

o 3 tablespoons water

o 1 clove roasted garlic (if you have it on hand – a raw clove would also work)

o 1 jalapeno pepper, seeded

o salt to taste


Instructions:

1. Add all ingredients to a blender and blend until smooth.


Salad Ingredients:

o 1 1/2 cups kale, cut into bite-sized pieces

o 1/4 cup black beans

o 1/2 cup chopped tomatoes

o 2 teaspoons flax seeds


Instructions:

1. Add green goddess dressing and enjoy!
